C is for Cookie..
and that’s good enough for me.
For those of you who are following me on instagram, you would have already seen me posting about the cookies that I baked on Sunday. If you aren’t following me, please do follow Cherieladie because I update there almost daily since it requires a lot less effort than blogging, which means.. you’ll see a lot more there!
Back to the cookies. Honestly, my first attempt trying to bake some from scratch and I’m glad it turned out alright! I keep seeing Diana‘s wonderful food posts (she’s a fellow mummy blogger and she won the Singapore Blog Awards Best Cooking Blog 2014) and it got inspired to do something with all the baking materials I have in the house. I turned to her blog for cookie recipes and found this Nutella Chocolate Chip Cookie recipe that looks simple enough, and I had all the ingredients on hand.
I was so raring to go on a saturday night when the kids went to bed and got down to work… only to realise that… I need to chill the dough in the fridge for at least an hour before I can bake. -_-”
It smells so good while the mixer was beating away, I was so excited. But I had to wait after it was done, so I went to bed and decided to bake on Sunday morning instead.
On sunday morning, I spring out of bed, took the dough out and scoop them into little blobs on a tray, popped some Reese peanut butter chips on the cookies.. me loves peanut butter..
I used too huge a blob of cookie dough for the first batch of cookies and my tray was too small, so the cookies were not placed in neat rows. Someone asked me that and I thought I’ll share that info here too. The subsequent trays all had smaller cookies so that I can bake more cookies at one go with the same tray that I had, placed neatly in rows.
The wonderful delicious smell of the cookies wafted through the entire house and the kids were super excited! Jerome kept standing at the oven waiting for the cookies to be done, and staring at them while it is being baked. Thankfully my oven door isn’t hot so I didn’t have to keep his little hands away.
It was really cute to be watching him and he is my #1 cookie fan. He ate a lot of them cookies!
I didn’t have a rack in the house to dry the cookies so i dumped all of them on this huge tray that I had. Jerry had a few pieces and said it was good. Jerome kept munching on them too, and keeps coming to the kitchen, pointing at the tray and asking for “crockiee”. I decided to bake another batch that afternoon and brought it to der’s cousins and relatives to share and everyone said it was nice. Those of you who are reading this, thank you so much for the support!
I think there were at least 90 cookies and most of them are gone by Monday. I saved a few at my office desk for breakfast and late night snacks when I stay back and that’s all that’s left. Even my colleagues said it was good, and I hope hey aren’t patronizing. But then again, I already have my biggest cookie fans in the house and kids don’t lie.
And I clocked in the most precious memory ever. Jerome has been asking for “crockieee” when he wakes up and every single time he walks into the kitchen. Even till today. Awwww… my crockie monster makes me very happy!
Am trying to spend more time in the kitchen baking because I really love how fun it is but time is something that I don’t have a luxury of. I want to try baking cupcakes, macaroons, pandan chiffon cakes next and if you have easy recipes of these, please do send them my way and thank you very much! I don’t bake much when I was still staying with mum because the kitchen’s pretty much her territory, but I loved to bake when I was a kid and you can read about the few baking adventures I had recently or check back soon for a new post!
